Back to School Shopping

Only three weeks left until the new school year starts!!!

It's a BIG year for Payten!  She starts Pre School this year.  I still can't believe she is 4 1/2!  What happened to my little baby?!  Time is sure flying by!  I love watching her grow and seeing all the new things she learns on a daily basis!  The school she will be attending requires the Pre School class to wear uniforms.  This has its pro/con's, I think at least.  So we started stocking up on some shirts, skirts, jumpers, and polo dresses.  Colors are kind of boring, navy & khaki, but of course we dress up with cute hair bows and flowers :-)

We ordered back packs from Pottery Barn Kids this year.  Camryn even got one too!  I wanted to order them for the girls last year but I was too late in ordering them and they all went on back order :-(.  So this year I promised I would be on top of it!  Both girls picked their own out.  Now I need to order personalized tags to put on their bags.  They had personalization for the bags but I didn't like that you could barely see their name on there.  So of course Etsy to the rescue.  Ahhh I love that site!

Last week was gymbuck redemption at Gymboree so of course Cam has lots of new clothes for school :-)  I obsessed with the Ice Cream Sweetie and the Sea Splash line.  Love the color scheme in both lines!  So fun and summery! :-)  So she is set until our fall weather strolls in, if even does this year!

Spaghetti with Sauteed Chicken

Tonight's dinner... let's hope its good!

Spaghetti with Sautéed Chicken and Grape Tomatoes 

Ingredients: 
  • 2 skinless chicken breast halves, diced in 1 inch cubes
  • cooking spray
  • 1/2 tsp each of dried oregano and dries basil
  • kosher salt and fresh pepper
  • 8 oz spaghetti (high fiber or low carb) I used Ronzoni Smart Taste
  • 2 cups grape tomatoes, halved
  • 6 cloves garlic, smashed and coarsely chopped
  • 4 tsp extra virgin olive oil
  • 4 tbsp chopped fresh basil
Directions:
Bring a large pot of salted water to boil.

Season chicken generously with salt, pepper, oregano and basil. Heat a large skillet on high heat. When hot, spray with oil and add chicken. Cook about 3-4 minutes, until no longer pink. Remove chicken and set aside.

Add pasta and cook according to package directions. Reserve about 1/2 cup pasta water before draining.

While pasta cooks, add olive oil to skillet on high heat. Add garlic and sauté until golden brown (do not burn). Add tomatoes, salt and pepper and reduce heat to medium-low. Sauté about 4-5 minutes. When pasta is drained, add pasta to tomatoes and toss well. If pasta seems too dry, add some of the reserved pasta water. Add fresh basil and chicken and toss well. Serve and top with good grated cheese.

Sean's Birthday Celebration

I can't believe my hubby turned 35 yesterday!  So crazy!  I feel like we were just celebrating the BIG 3-0 for him!  I guess having kids make the years FLY by!  We headed out Saturday night with some friends to celebrate.  We went to place called Firkel and Kegler.  What a fun place!  They have a ton to do there!  Such a great place for an adult night out!

Thank you to all of our friends that were able to come out and celebrate with us!  We had a blast!

Weekday Randoms

It hasn't been much of a week of blogging over here.  It's been a so/so week but I guess I am getting in one of those blogging slumps...

Potty Training update with Camryn.  Well the first day at school she didn't pretty well, only one accident.  She came home went on the potty and not 5 minutes later she peed a puddle in the kitchen.  Ahhhhh.  I know she will have accidents but how can you have an accident when you just went on the potty!  Her second day she had two accidents :-(.  Third day three accidents, I hope this isn't a pattern!  I am praying today is a better day!  We'll see.

Poor Payten took a spill in the parking lot at school and has a boo-boo above her lip :-(.  I feel so bad but that girl is so clumsy!!  Sometimes she walks like she just started walking.  I am hoping it heals quick.  We have been applying vitamin E and antibiotic cream.  Thank goodness we don't have any pictures planned soon!

It's Sean birthday on Sunday, so we are having an adult night out with friends Saturday night.  I am sooo looking forward to it!  

I have been gathering a few more birthday party ideas for Cam's 3rd birthday party. I can't believe its only like 2 months away, so crazy!!!  I think I have finally narrowed down the invitations and printable items.  Next is her birthday outfit!  So many to choose from on Etsy!

Potty Training - Cam's time!

Why do I feel like I just wrote a post about this for Payten?  It certainly feels like it but it was actually 2 years ago to the month!!!... Potty Training Day #1 And now its Camryn's time.  Ahhhh... potty training!  The thing I dread the most!  Isn't there a person I can hire to potty train Camryn?  I would pay just about any price for it right now!

Camryn really hasn't shown one interest to start potty training but since she will be 3 in a few months we have to at least try.  Her teachers say she does well and will go on the potty when they take her.  But at home she isn't so great about it.  I've decided that this weekend we are going to make the plunge!  Wish us luck!  We are soooo going to need it!  I have been changing Cam into panties when she gets home from school to get her use to it and shes done, ok.  We'll see how the weekend goes!  I am sure I will have a LONG post Monday all about it, LOL.

Cinderelly

Another weekend has come and gone :-(  Why do they always go so fast?!

Friday night I had my monthly Bunco girls night.  Lots of fun as always.  I look forward to the second Friday of every month :-)  After our busy week last week it was great to have a night out :-)

Saturday the hubby worked on some yard work and helped one of our friends with their new house, so while the hubby was working hard, I spent the day with the girls.  First we met some friends for lunch at Chick-Fil-A, then we headed to our favorite store, Target :-).  The girls were tired out so we squeezed in a quick nap before heading to the play Cinderella.  The play was adorable.  Payten loved it, and well Camryn not so much.  I should have known better then to have bring her but I didn't want her to be left out, but she really didn't enjoy it :-(  So I guess next time I know.  In the evening the hubby and I enjoyed a date night at home, Olive Garden to go and 21 Jump Street :-)

Sunday we had a day of NO plans and it was nice to just go with the flow.  We ran a few errands as a family, then headed to the community pool.  We were exhausted after a few hours at the pool, so we grabbed a quick lunch and enjoyed a great afternoon nap :-)

We had great weekend!  Fun but just a relaxing one as well!  That's my kind of weekend :-)
