Recipe: Caprese Skewers w/ Balsamic Drizzle



Ingredients:
  • 1 cup balsamic vinegar
  • cherry or grape tomatoes
  • mini mozzarella cheese balls (could use regular sized ball, and cut into bite-sized pieces)
  • fresh basil leaves, cut in half if large
  • salt & pepper
  • toothpicks

Directions:

1. Bring balsamic vinegar up to a boil in a saucepan, then lower heat to medium and simmer until it’s the consistency of very thin maple syrup, about 10 minutes. Pour into a bowl and let cool.

2. Cut tomatoes in half. Thread a mini mozzarella cheese ball, basil leaf (fold in half if large) and a tomato half onto a tooth pick. Repeat with remaining ingredients. Sprinkle with salt & pepper, then drizzle cooled balsamic reduction on top.

First weekend in July

I know its Friday and I am just blogging about last weekend but it's been a busy week around here!  I have been trying to write this post since Monday!

Friday night started off our weekend.  The girls school host a parents night out the first Friday of every month so we try and take advantage of this.  Last month we were busy but luckily we got to enjoy an ADULT night out!!  We met our friends Lena & Marcus at Bonefish for dinner and headed over to the movie theater to see Ted, which we didn't end up seeing because they over sold seats, ugh!  So instead we went bowling.  Had a blast and lots of laughs!!
Saturday morning we packed our bags and headed down south to spend the weekend with my parents.   Its been a while since we have been down there.  The girls got enough spending the weekend swimming in the pool and enjoying the beach (their favorite place).  It was great to get away for the weekend.  Even Roxy made the trip with us :-)  We got back late on Sunday, like always, so I was up super late getting things together for our week.
 Haircut time for the girls! :-)

Today I have a half day off from work, woo hoo!  Not too sure of my afternoon plans but I am hoping I can squeeze in a nap since I've had several horrible nights sleep all week :-(  Tonight is our monthly girls Bunco night, can't wait to have a girls night!  Good food, drinks, lots of laughs, great friends... Does it get better then that? :-)  Happy Friday!

Recipe: Bowtie Skillet Lasagna

Yummy recipe I came across from Life as a Lofthouse (Food Blog).

Bowtie Skillet Lasagna

10 ounces Bowtie or Farfalle noodles
1 pound lean ground beef
2 Tablespoons Olive oil
1 (24 ounce) jar Spaghetti sauce ( I use 'Ragu' Traditional)
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning mix
1 cup shredded Mozzarella cheese
1/2 cup sour cream


Directions: Boil noodles in a large pot of water, according to package directions. Drain water.

Meanwhile, cook ground beef in a large skillet until browned. Drain grease. Add cooked noodles to ground beef and 2 tablespoons olive oil. Stir together.

Add spaghetti sauce, garlic powder, Italian seasoning, mozzarella cheese and sour cream to the beef and noodles. Carefully stir together to combine.

Turn heat to low, and continue to cook and stir until mixture is thoroughly heated. About 10 minutes. Serve and enjoy!

4th of July

Ugh these blog issues are driving me insane!  I am having problems uploading photos due to not having space left through google.  I have been been going back and forth on what to do.  So it may be a while until my posts are pictureful (is that even a word?).

So for now I will leave you with one of my favs from the 4th of my little cuties!!!

We had a great 4th!  Started our day at Aquatica with friends.  Unfortunately we got rained out around 2p.  So we headed home, took a nice nap, then showered and got dressed and heading over to SeaWorld for a few hours.  It was great day off with the hubby and the girls!!!  Not our usual 4th of July plans but I think even better then the years before :-)
