Busy weekend & week!
As you can tell from my million and one posts, we had a SUPER busy but FUN weekend! I actually didn't even get to post all of the pictures from our weekend.
We attended Bryce's 3rd Birthday party on Saturday! The girls always have a blast at this place. Oh yeah and my husband too! I think he might even have more fun then the girls. He is a big little kid, haha!
The beginning of our weeks these days are pretty busy. Monday afternoon's Payten has dance class and Tuesday's Camryn has her dance class. So needless to say after work I am running around town like a crazy woman!
This week was Payten's 1st dance class of the season. The girls did AMAZING! This is a new class for Payten's age group. This year they are doing a tap/jazz combo class. Payten LOVED it! She talked about it on the entire way home from class. I can't wait to see how much they learn this year! She has come so far in the past 2 years.
Camryn had her 2nd dance class on Tuesday and she did awesome. This girl LOVES to dance! I am excited to see how much she'll learn throughout the year!
Camryn is in this picture taking phase, I know shocking right? But I am just going with it and snapping away! This was before school one morning this week :-)
We had a busy weekend ahead so I am sure we'll have a ton of picture posts from our weekend! Hope everyone is having a great week!!

Never Forget
11 years ago today our country was forever
changed! Remembering all of the heros of 9/11, and our brave men and
women who fight everyday for our freedom and peace of mind, especially
my brave amazing sister!

Soccer Practice
Well the second practice went okay. I think Payten is having a hard time with her Dad coaching. She is trying to take advantage of her Dad being the coach and of course my husband won't have that. I am hoping with a few more practices/games she will get the hint and just have fun! When she is participating, she is having a blast!

Disney on Ice - Rockin' Ever After
We had a SUPER busy weekend, but a really fun one!
Friday night we started it off by going to see Disney on Ice! The girls absolutely loved it! This was Payten's 4th year going and was excited like it was her first. This was Camryn's first year and she really enjoyed it. I thought this show was way better then last years. I love all of the singing! And the crazy person that I am I am singing and dancing right along in my seat :-) I can't wait to see what theme next years will be!

Recipes: Chicken Kiev
· 1 tablespoon chopped green onion
· 1 tablespoon snipped fresh parsley
· 1 clove garlic, minced
· 1/2 of a 1/4-poundstick of butter,
chilled
· 1 egg, beaten
· 1 tablespoon water
· 1/4 cup all-purpose flour
· 1/2 cup fine dry bread crumbs
· 4 skinless, boneless chicken breast
halves
· Salt and black pepper
· 1 tablespoon butter
· 1 tablespoon cooking oil
Directions:
1. In a small bowl combine green onion, parsley, and garlic;
set aside. Cut chilled butter into four 2-1/2x1/2-inch sticks. In a shallow
bowl stir together egg and water. Place flour in another shallow bowl. Place
bread crumbs in a third shallow bowl. Set aside.
2. Place a chicken breast half between 2 pieces of plastic
wrap. Using the flat side of a meat mallet pound chicken lightly into a
rectangle about 1/8 inch thick. Remove plastic wrap. Sprinkle with salt and
pepper. Sprinkle with one-fourth of the green onion mixture. Place a butter
piece in center of chicken piece. Fold in sides; roll up. Repeat with remaining
chicken.
3. Coat chicken rolls with flour. Dip in egg mixture; coat
with bread crumbs. Dip in egg mixture again; coat with with additional bread
crumbs. (Coat ends well to seal in the butter.) Place coated chicken in 2-quart
rectangular baking dish. Cover and chill for 1 to 24 hours.
4. In a large skillet melt the 1 tablespoon butter over
medium-high heat; add oil. Add chilled chicken rolls. Cook about 5 minutes or
until golden brown, turning to brown all sides. Place rolls in a 2-quart
rectangular baking dish. Bake, uncovered, in a 400 degree F oven for 15 to 18
minutes or until chicken is no longer pink (170 degrees F). Spoon any drippings
over rolls. Makes 4 servings.
Camryn's 1st Dance Class
Tuesday Camryn had her 1st dance class! She LOVED it! She wanted to dance last year but since she is an October baby she missed the cut off. She was more then ready this year to dance. She was sooo excited! I picked her up from school early and as soon as we left the classroom all I heard was "I am going to dance". She must have said it fifty times. It was too cute!!
She was just all smiles! I can't believe how big my baby girl is getting!!!
